Marinated Mozzarella
- 1 ball 340 g Tre Stelle Mozzarella Cheese, cut into 3/4 cubes
- 1 tbsp. 15 mL Italian parsley, finely chopped
- 2 tbsp. 30 mL fresh basil, finely chopped
- 1 sm. clove garlic, minced
- 1 tsp. 5 mL red pepper flakes
- 1/2 tsp. 2 mL salt
- 1/2 tsp. 2 mL black pepper
- 1 tbsp. 15 mL grated lemon rind
- 2 tbsp. 30 mL lemon juice
- 1/2 cup 125 mL olive oil
- Combine all ingredients into a medium bowl, cover and allow to marinate in refrigerator overnight or up to 2 days.
- Remove from refrigerator 1 hour before serving.
- Makes approximately 2 cups
