Artichokes With Goat Cheese Recipe
- 8 Tbsp. Fresh lemon juice
- 6 med Artichokes, tops and stems trimmed
- 8 ounce Soft fresh goat cheese, (such as Montrachet)
- 3 Tbsp. Whipping cream
- 3 tsp Chopped fresh thyme or possibly 1 tsp. dry
- 2 lrg Garlic cloves, pressed
- 3 Tbsp. Butter
- 3 Tbsp. Extra virgin olive oil
- Bring large pot of water to boil.
- Add in 2 Tbsp.
- lemon juice to water.
- Add in artichokes and cook till tender, about 25 min.
- Drain well.
- Cold completely.
- Using small spoon and keeping artichokes intact, carefully remove tiny center leaves and chokes.
- Mix goat cheese, cream, 2 tsp.
- thyme and garlic in small bowl.
- Season to taste with salt and pepper.
- Spoon mix into center of artichokes, dividing equally.
- Place each artichoke in center of square piece of foil large sufficient to cover artichoke completely.
- Gather foil up around artichoke, twisting top of foil to secure.
- (Can be prepared 1 day ahead.
- Chill.)
- Preheat oven to 400F.
- Place artichokes on baking sheet and bake till heated through, about 15 min.
- Heat butter in heavy small skillet.
- Add in extra virgin olive oil and remaining 6 Tbsp.
- lemon juice and bring to simmer.
- Remove from heat and stir in remaining 1 tsp.
- thyme.
- Season to taste with salt and pepper.
- Unwrap artichokes.
- Place each in center of plate.
- Drizzle butter mix around each and serve.
- Serves 6.
