Pork and Gingered Apples

  1. In small bowl, combine 1/4 teaspoon coriander, 1/8 teaspoon cumin, 1/8 teaspoon salt, and 1/4 teaspoon pepper.
  2. Cut pork crosswise into 1 1/2-inch-thick slices.
  3. Press each slice with hand to flatten slightly; rub with spices.
  4. In 12-inch skillet, heat oil on medium-high until hot.
  5. Add pork; cook 4 minutes or until golden.
  6. Turn pork; cook 3 to 4 minutes or until barely pink in center.
  7. Transfer to plate.
  8. Meanwhile, coarsely grate one apple and chop remaining two apples.
  9. Reduce heat to medium.
  10. Add garlic and ginger; cook 30 seconds.
  11. Add apples and remaining 1/4 teaspoon coriander and 1/8 teaspoon cumin.
  12. Cook 2 minutes, stirring often.
  13. Add 1 cup water and 1/4 teaspoon salt, scraping up browned bits.
  14. Cover; cook 7 minutes or until apples are very tender.
  15. Return pork to skillet; cook 2 minutes to heat through.
  16. While apples cook, in large, microwave-safe bowl, stir bulgur and 1 1/2 cups water.
  17. Microwave, uncovered, on high 10 to 12 minutes or until tender.
  18. Fluff with fork; serve with pork, apple mixture, and wilted Swiss chard or other greens, if you like.
