Bran Apple Muffins Recipe
- 1 1/2 c. all-purpose flour
- 1 1/4 tsp baking soda
- 1/4 tsp baking pwdr
- 1/2 tsp salt
- 1/4 tsp grnd allspice
- 1/3 c. currants
- 2/3 c. warm water
- 1 1/4 c. unprocessed wheat bran
- 3/4 c. shredded unpeeled cooking apple
- 1/2 c. nonfat buttermilk
- 1/3 c. molasses
- 2 Tbsp. vegetable oil
- 1 x egg plus
- 1 x egg white beaten vegetable cooking spray
- PREHEAT oven to 400F.
- Combine the first 5 ingredients (through allspice) in a large bowl; stir well.
- Make a well in the center of mix; set aside.
- Combine currants and water in a medium bowl; let stand 2 min.
- Add in bran; stir well.
- Add in apple and next 4 ingredients (through Large eggs); stir well.
- Add in to flour mix, stirring just till dry ingredients are moistened.
- Spoon batter proportionately into muffin pans coated with cooking spray.
- Bake for 20 min or possibly till a toothpick inserted in the center comes out clean.
- Remove from pans immediately.
- Makes about 1 dozen muffins.
