Baby Spinach Salad With Avocado, Fruit and Poppy Seed Dressing

  1. To make dressing, whisk together honey, vinegar, mustard.
  2. Add oil in a slow stream and mix well.
  3. Stir in poppy seeds.
  4. Using serrated knife, cut peel and membranes from grapefruit.
  5. Section the fruit.
  6. Gently arrange spinach on individual plates.
  7. Top with sliced avocado and grapefruit sections.
  8. Drizzle 1 Tbsp dressing over each salad.
  9. Sprinkle with toasted pine nuts and Gorgonzola, if desired.
