Frito Chili Pie
- 4 can chili with no beans (12-15oz can)
- 8 oz cream cheese (softened)
- 2 packages Fritos corn chips (generic works just fine)
- 1 can sliced green chilis, drained
- 1 can sweet corn, drained (or you can substitute frozen corn if you prefer)
- 24 oz shredded cheese (any kind is fine, I use a monterrey jack blend)
- Preheat oven to 375.
- Blend together softened cream cheese, chili, drained corn, and drained green chili's.
- Spray down a 9x13" casserole dish with nonstick spray.
- Layer corn chips on the bottom.
- Spread the chili mix onto the corn chips, then add about half the cheese, then repeat: chips, chili mix, and cheese.
- Cover in foil and bake for about 30mins.
- Remove foil and bake for another 10mins or so, or until cheese is bubbly.
- We usually top of off with more chips (bc we like the extra crunch) and sour cream.
- You can add rotel and jalapenos to the chili mix, too, for an extra kick.
- Enjoy!
