Wicked Good Pizza Dough
- 1 tablespoon honey
- 14 ounce fast rising yeast
- 1 tablespoon olive oil (little extra)
- 2 -2 12 cups bread flour
- 14 cup parmesan cheese (Optional to replace 1/4 cup flour)
- 1 cup warm water
- 1 teaspoon salt
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon rosemary
- 1 teaspoon thyme
- Put honey in large mixing bowl with 1/2 cup warm water, stir to dissolve honey.
- Add yeast packet and stir until yeast is well separated.
- Allow yeast to activate.
- In a small bowl, mix salt and spices.
- (Dried rosemary may use to be broken up a bit as well).
- When yeast has activated, add 1 cup of Bread Flour, 1 Tbsp of Olive Oil, and the salt and spice mixture.
- Mix with a dough hook for a minute or two.
- While continuing to mix, add remaining 1/2 cup of water and slowly begin adding flour, 1/4 cup at a time.
- (If you are using the parmesan, add it while mixing in the remaining flour).
- When the dough on the hook leaves the bowl clean, holds up as a ball, and doesn't stick to your hands too badly anymore when touched, you have added enough flour.
- Remove the dough from the mixing bowl and roll into a ball with your hands; place this ball in a clean bowl with a splash of olive oil.
- Toss the dough ball until it is coated, then cover and allow to rise for about one hour.
- When the dough has doubled in size, you may stretch it, dress it, and cook it in the oven at 500 degrees for 10-12 minutes.
