Wicked Good Pizza Dough

  1. Put honey in large mixing bowl with 1/2 cup warm water, stir to dissolve honey.
  2. Add yeast packet and stir until yeast is well separated.
  3. Allow yeast to activate.
  4. In a small bowl, mix salt and spices.
  5. (Dried rosemary may use to be broken up a bit as well).
  6. When yeast has activated, add 1 cup of Bread Flour, 1 Tbsp of Olive Oil, and the salt and spice mixture.
  7. Mix with a dough hook for a minute or two.
  8. While continuing to mix, add remaining 1/2 cup of water and slowly begin adding flour, 1/4 cup at a time.
  9. (If you are using the parmesan, add it while mixing in the remaining flour).
  10. When the dough on the hook leaves the bowl clean, holds up as a ball, and doesn't stick to your hands too badly anymore when touched, you have added enough flour.
  11. Remove the dough from the mixing bowl and roll into a ball with your hands; place this ball in a clean bowl with a splash of olive oil.
  12. Toss the dough ball until it is coated, then cover and allow to rise for about one hour.
  13. When the dough has doubled in size, you may stretch it, dress it, and cook it in the oven at 500 degrees for 10-12 minutes.
