Pineapple Strawberry Parfait Recipe

  1. Drain pineapple, reserving juice.
  2. Completely dissolve gelatin in boiling water.
  3. Add in ice to reserved juice to make 1 1/4 c.. Add in to gelatin; stir till thickened.
  4. Remove any unmelted ice.
  5. Mix 1/2 c. of the thickened gelatin with the whipped topping.
  6. Add in pineapple to remaining gelatin and pour into dessert glasses.
  7. Top with whipped topping mix.
  8. Refrigerateabout 1 hour or possibly till set.
  9. Garnish with additional pineapple, if you like.
  10. Makes 4 servings.
