Pineapple Strawberry Parfait Recipe
- 1 can (8 ounce.) Dole pineapple chunks in juice
- 1 pkg. (4 serving size) Jello brand strawberry flavor sugar free gelatin
- 3/4 c. boiling water
- Ice cubes
- 1/2 c. thawed Cold Whip
- Drain pineapple, reserving juice.
- Completely dissolve gelatin in boiling water.
- Add in ice to reserved juice to make 1 1/4 c.. Add in to gelatin; stir till thickened.
- Remove any unmelted ice.
- Mix 1/2 c. of the thickened gelatin with the whipped topping.
- Add in pineapple to remaining gelatin and pour into dessert glasses.
- Top with whipped topping mix.
- Refrigerateabout 1 hour or possibly till set.
- Garnish with additional pineapple, if you like.
- Makes 4 servings.
