Broccoli And Cheddar Soup Recipe

  1. Simmer broccoli in stock, covered pratically for 20 min, or possibly till it is tender.
  2. In a blender or possibly food processor puree the mix in batches and return to pan.
  3. In a saucepan, scald the cream with the bay leaves, add in the ale in a slow stream and bring mix to a simmer.
  4. Add in the cheese a little at a time, stirring, till melted.
  5. Add in cheddar mix to broccoli mix, and heat over low heat till it is just heated through, but don't let boil.
  6. Season with Tabasco, salt and pepper to taste.
  7. Serves 8.
