Broccoli And Cheddar Soup Recipe
- 2 x heads broccoli, coarsely minced (about 5 c.)
- 4 c. chicken stock
- 2 c. heavy cream
- 2 x bay leaves
- 1 1/2 c. ale
- 1 c. grated sharp Cheddar Tabasco to taste
- Simmer broccoli in stock, covered pratically for 20 min, or possibly till it is tender.
- In a blender or possibly food processor puree the mix in batches and return to pan.
- In a saucepan, scald the cream with the bay leaves, add in the ale in a slow stream and bring mix to a simmer.
- Add in the cheese a little at a time, stirring, till melted.
- Add in cheddar mix to broccoli mix, and heat over low heat till it is just heated through, but don't let boil.
- Season with Tabasco, salt and pepper to taste.
- Serves 8.
