Silky Chocolate Peanut-Butter Pie

  1. Melt chocolate chips in a small microwave-safe bowl on high for 90 seconds.
  2. Stir until smooth.
  3. Cool Slightly.
  4. Or melt in a small heavy saucepan over low heat.
  5. Cool slightly.
  6. Place tofu, peanut butter, sugar and vanilla in a food processor.
  7. Whirl until smooth.
  8. Add the cooled chocolate.
  9. Whirl until combined.
  10. Pour the mixture into the prepared crust.
  11. Cover with plastic wrap and refrigerate several hours or until the filling is set.
  12. Garnish the edge with peanuts or drizzle melted chocolate on pie, if desired.
