Oil-Free Pound Cake with Whey
- 200 grams Pancake mix
- 2 Eggs
- 200 ml Whey from drained yogurt
- 80 grams Sugar
- Line the cake pan with parchment paper and preheat the oven to 170C.
- Lightly beat the eggs.
- Add the sugar and mix until thick and stiff peaks form.
- Add the whey and mix well.
- Add the pancake mix and mix until no longer powdery.
- Don't over-mix.
- You can combine the ingredients with a whisk.
- Pour into the cake pan and bake in an oven preheated to 170C for about 40 minutes.
- When a toothpick or skewer inserted in the center comes out clean, it's done!
- Once cooled, cut into pieces.
- You'll be surprised with how fluffy it is.
- I added some cocoa powder and baked it in a 20 x 20 cm pan.
