Spicy Pork Carnita
- 1-1/2 qt. pork butt roasts, cooked, shredded
- 3/4 tsp. ground cumin
- 1-1/2 cups KRAFT Original Barbecue Sauce
- 6 each garlic cloves, minced
- 3/4 tsp. ground red pepper (cayenne)
- 24 each corn tortillas (6 inch), warmed
- 1-1/2 qt. lettuce, shredded
- 3 each avocados, peeled, pitted and cut into slices
- 3 cups tomatoes, chopped Safeway 1 lb For $1.29 thru 02/09
- 3 cups shredded Monterey Jack cheese
- Combine pork and cumin in large skillet; cook on medium heat until heated through, stirring frequently.
- Add barbecue sauce, garlic and red pepper; mix well.
- Cook 5 min.
- or until heated through, stirring occasionally.
- For each serving: Top 1 tortilla with 1/4 cup each of the meat mixture and lettuce, 2 avocado slices and 2 Tbsp.
