Tomatoes, Mozzarella and Roasted Red Peppers

  1. Slice tomatoes about 1/2 inch thick and place on a serving dish.
  2. Sprinkle with salt and pepper.
  3. Slice the mozzarella about 1/4 inch thick, and place on top of the tomatoes.
  4. Arrange slices of roasted pepper over the cheese.
  5. Slice basil leaves into ribbons (to get the basil "ribbons", stack the leaves, roll them up, and slice them across), and sprinkle with basil.
  6. Drizzle with olive oil and balsamic vinegar.
  7. Serve on pieces of the bread.
