Tomatoes, Mozzarella and Roasted Red Peppers
- 2 lg. fresh meaty tomatoes
- Salt and fresh ground pepper
- 3 OR
- 4 sm. rounds)
- Roasted red peppers
- 10 basil leaves, sliced in ribbons
- Olive oil
- Balsamic vinegar
- 1 loaf good crusty bread
- Slice tomatoes about 1/2 inch thick and place on a serving dish.
- Sprinkle with salt and pepper.
- Slice the mozzarella about 1/4 inch thick, and place on top of the tomatoes.
- Arrange slices of roasted pepper over the cheese.
- Slice basil leaves into ribbons (to get the basil "ribbons", stack the leaves, roll them up, and slice them across), and sprinkle with basil.
- Drizzle with olive oil and balsamic vinegar.
- Serve on pieces of the bread.
