Seven-Minute Frosting
- 1 1/2 cups granulated sugar (375 mL)
- 1/4 tsp cream of tartar (1 mL)
- 1/8 tsp salt (.5 mL)
- 1/3 cup water (75 mL)
- 2 egg whites
- 1 1/2 tsp vanilla extract (7 mL)
- Hand-held electric mixer
- In the top of a double boiler or a heatproof bowl, using hand-held electric mixer, whip sugar, cream of tartar, salt, water and egg whites on high speed for 1 minute.
- Place over saucepan of boiling water over medium heat, being sure that boiling water does not touch bottom of top pan.
- Beat on high speed until very light and fluffy, for 7 minutes.
- Beat in vanilla.
- Let cool.
- Variation:
- Beat 3 oz (90 g) unsweetened chocolate, melted and cooled, with vanilla.
