Squish Squash
- 1 zuchinni (or a bunch of yellow squash)peeled, diced (or you can use frozen)
- 1 cup chopped onion
- 1 cup mayonnaise
- 3/4 cup sour cream
- 3 lg. eggs
- 1 cup crushed cheese crackers
- 1 env. (3/8 oz.) env. buttermilk Ranch style salad dressing mix
- 1 cup sharp cheddar cheese
- 1 tbsp. chicken bouillon granules (left-over Ranch dip mix can be used)
- 1 cup soft bread crumbs (coated in melted butter)
- Cook squash and onion together until tender, drain well.
- Mix together remaining ingredients EXCEPT bread crumbs.
- When mixed well, add cooked squash and onion mixture, stir.
- Pour into greased baking dish.
- Top with buttered bread crumbs.
- Bake at 350 for 20 - 25 minutes.
