Chipotle Barbecue Chicken Pizza
- 1 small boneless skinless chicken breast (1/4 lb./115 g), cut into bite-size pieces
- 1/2 cup each chopped green and red peppers
- 1/4 cup thinly sliced red onions
- 1/4 cup frozen corn
- 1 ready-to-use baked pizza crust (12 inch)
- 1/3 cup Bull's-Eye Bold Original Barbecue Sauce
- 2 tsp. chopped canned chipotle peppers in adobo sauce
- 1 cup Cracker Barrel Shredded Mozzarella Cheese
- Heat oven to 425 degrees F.
- Cook chicken with vegetables in large skillet sprayed with cooking spray on medium heat 8 to 10 min.
- or until chicken is done, stirring occasionally.
- Place pizza crust on baking sheet.
- Mix barbecue sauce and chipotle peppers; spread over crust.
- Top with cheese and chicken mixture.
- Bake 10 to 12 min.
- or until cheese is melted and edge of crust is golden brown.
