Crawfish Mirliton Corn Macque Choux

  1. Heat butter in medium saucepot.
  2. Add corn and saute for 2 minutes.
  3. Add chicken stock, onion, bell pepper, celery, and tomatoes.
  4. Turn heat up and cook until all of the chicken stock has evaporated.
  5. Add garlic, Cajun seasoning, salt, hot sauce, and heavy cream.
  6. Bring to a boil.
  7. Add mirlitons and cook for an additional 5 minutes.
  8. Add crawfish tails and simmer for 10 minutes or until cream starts to reduce and thicken.
  9. Add parsley and green onions and stir to combine.
  10. Serve with rice, pasta, or polenta.
