Soy Bean Hamburger Steaks
- 200 grams Cooked soy beans
- 1/4 Onion
- 3 cm Carrot
- 5 Shiso leaves
- 3 tbsp Katakuriko
- 1 1/2 tbsp Soy sauce
- 1 3 cm knob Grated ginger
- 1 tbsp Ground sesame seeds
- 1 tsp Sugar
- 1 dash Salt and pepper
- 1 dash Nutmeg
- 1 tsp Japanese dashi stock powder
- 1 bunch Mushrooms of your choice
- 150 ml Dashi stock
- 2 tbsp Soy sauce
- 1 tbsp Mirin
- 1 tbsp Sugar
- 1 tbsp Katakuriko dissolved in water
- 1 Green onions or scallions
- Crush the cooked soy beans with your pestle & mortar or in a food processor.
- Chop the onion and carrot finely and microwave for two minutes.
- Julienne the shiso leaves.
- Put all the ingredients except the sauce ingredients into a bowl and mix together.
- Shape the mixture into small balls and fry in a frying pan with oil until crispy and golden on both sides.
- In the same frying pan stir-fry the mushroom quickly and add the dashi stock, soy sauce, sugar and mirin.
- Check the taste and if it is alright, add the katakuriko dissolved in water to thicken the sauce.
- Sprinkle with chopped green onion and pour over the burgers.
