Pork Chops With Vegetables
- 6 lean pork loin chops (1/2-inch thick)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- vegetable cooking spray
- 1/2 tsp. crushed savory
- 1 bay leaf
- 2 1/2 c. tomato juice
- 1/2 c. water
- 1 cabbage, cut in 6 wedges
- 6 carrots, sliced in 1-inch pieces
- 1 1/2 c. chopped onion
- 6 small new potatoes, halved
- Season chops with salt and pepper.
- Coat Dutch oven with cooking spray.
- Place over medium heat until hot.
- Add chops. Brown on both sides.
- Add savory, bay leaf, tomato juice and water.
- Bring to boil.
- Reduce heat to simmer.
- Cover and cook for 30 minutes.
- Add remaining ingredients.
- Return to boil.
- Reduce heat to simmer; cover and cook 35 minutes or until vegetables are tender.
- Remove bay leaf before serving.
- Makes 6 servings. Double for a crowd.
