Turkey Lasagna
- 1 pound Ground Sweet Turkey Sausage
- 1 whole Large Onion, Chopped
- 1 whole Large Green Pepper, Chopped
- 3 cans (14 Oz. Size) Diced Tomatoes
- 2 cans (6 Oz. Size) Tomato Paste
- 1 cup Water
- 1 Tablespoon Sugar
- 2 Tablespoons Parsley
- 1 Tablespoon Basil
- 2-23 cups Cottage Cheese
- 4 ounces, weight Shredded Parmesan Cheese
- 1 Tablespoon Parsley
- 1 Tablespoon Oregano
- 1 whole Box Lasanga Noodles, 16 Ounce Box Cooked According To Package Instructions
- 3 cups Mozzarella Cheese
- Brown turkey, onion and green pepper in a skillet over medium heat.
- Once turkey is browned, drain any excess grease.
- Add diced tomatoes with liquid, tomato paste, water, sugar, parsley and basil.
- Simmer for 30 minutes.
- Let cool slightly.
- In a bowl, mix cottage cheese, Parmesan, parsley and oregano.
- In a 9 x 13 pan, layer as follows: 1/4 of the sauce, 1/5 of the lasagna noodles, 1/3 of the cheese mixture and 1/5 of the lasagna noodles.
- Then layer again using the same ratios: more sauce, followed by the cheese mixture, then lasagna noodles.
- Then layer sauce and lasagna noodles.
- Top that with the cheese mixture, one last layer of lasagna noodles, followed by sauce.
- Top with mozzarella cheese.
- Bake covered with a sheet of foil at 350 degrees F for 1 hour.
- Uncovered for the last 15 minutes.
- Let sit 10-15 minutes before serving.
