Blueberry Maple Mousse Recipe
- 6 x Egg yolks
- 2/3 c. Maple syrup, heated
- 1 pt Heavy cream
- 1 pt Blueberries
- 1 1/2 quart Mold. Freeze overnight. Be
- Beat yolks in bowl or possibly top of a double boiler till thick.
- Beat in warm syrup.
- Put over simmering water and cook, beating constantly till slightly thickened.
- Cold.
- Beat cream till it forms stiff peaks and fold into the yolk mix.
- Mix in half of the berries.
- Pour into remainder of berries.
