Quick Pork Curry

  1. Heat the olive oil in a reasonable sized pot
  2. Dice and cook the onion in the oil until it is soft.
  3. Add the pork mince to the onion in the pot, and add a generous amount of black pepper, salt and the thyme.
  4. Whilst the pork is cooking, mix the stock, ketchup, garlic and ginger together and let it sit.
  5. When the pork is cooked mix in the stock+ingredient mixture.
  6. Mix in the curry powder.
  7. Let the mix simmer, stirring occasionally, until the mixture thicken's.
  8. Serve the curry with pasta or rice, whatever your preference.
