Quick Pork Curry
- 1 1/2 tbsp ketchup
- 1 onion
- 1 tsp ginger
- 1 1/2 tbsp thyme
- 500 grams of pork mince
- 1 tbsp olive oil
- 1 tbsp curry powder
- 1 clove garlic crushed
- 1/4 pints pork/ham stock
- Heat the olive oil in a reasonable sized pot
- Dice and cook the onion in the oil until it is soft.
- Add the pork mince to the onion in the pot, and add a generous amount of black pepper, salt and the thyme.
- Whilst the pork is cooking, mix the stock, ketchup, garlic and ginger together and let it sit.
- When the pork is cooked mix in the stock+ingredient mixture.
- Mix in the curry powder.
- Let the mix simmer, stirring occasionally, until the mixture thicken's.
- Serve the curry with pasta or rice, whatever your preference.
