Rhubarb Crumble
- 3 c. rhubarb, sliced
- 1 c. cubed, peeled apples
- 1/2 to 1 c. sliced strawberries
- 1/3 c. sugar
- 1/2 tsp. cinnamon
- 1/2 c. flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 4 Tbsp. oleo
- 2/3 c. brown sugar
- 2/3 c. quick oats
- vanilla ice cream
- Combine rhubarb, apples and strawberries; spoon into a greased 8-inch square baking dish.
- Combine sugar and cinnamon; sprinkle over fruit.
- Set aside.
- In a bowl, combine flour, baking powder and salt.
- Cut in oleo until mixture resembles coarse crumbs. Stir in brown sugar and oats.
- Sprinkle over rhubarb mixture. Bake at 350u0b0 for 40 to 50 minutes, or until lightly browned. Serve cold or warm with a scoop of ice cream if desired.
