Ww 6 Points Tropical Black Beans & Rice

  1. Coat a large nonstick skillet with cooking spray.
  2. Add oil and place over medium heat until sizzling.
  3. Add all ingredients except beans and rice.
  4. Cook, stirring occasionally, until peppers are crisp-tender, about 5 minutes.
  5. Stir in beans.
  6. Cook until heated through, about 5 minutes.
  7. Serve over rice.
  8. Points figured on 3/4 cup rice and 1 cup bean mixture per serving.
