Home-Style Biscuits with Shiitake Mushroom Gravy

  1. Preheat oven and bake biscuits according to package directions.
  2. Meanwhile, melt butter in heavy large skillet over medium-high heat.
  3. Add mushrooms and saute until brown and soft, about 6 minutes.
  4. Add flour and thyme and stir 1 minute.
  5. Whisk in broth, then Madeira.
  6. Boil until mixture thickens to gravy consistency, whisking occasionally, about 8 minutes.
  7. Season to taste with salt and pepper.
  8. Split or cut open 4 biscuits (save remaining biscuit for another time; can be reheated).
  9. Place 4 biscuit halves on each of 2 plates.
  10. Spoon gravy over.
