Stuffed Peppers
- 2 Tbsp. KRAFT Zesty Italian Dressing
- 1 lb. ground beef King Sooper's 1 lb For $3.99 thru 02/09
- 1 cup leftover cooked rice
- 1 cup KRAFT Shredded Cheddar & Monterey Jack Cheeses, divided
- 1/2 cup pigeon peas
- 1/4 cup sofrito sauce base (recaito)
- 4 large green bell peppers, cut in half lengthwise, seeded
- 1 cup salsa
- Preheat oven to 350F.
- Heat dressing in large skillet on medium-high heat.
- Add meat; cook 5 to 7 min.
- or until cooked through, stirring frequently.
- Drain.
- Return meat to skillet.
- Add rice, 1/2 cup of the cheese, peas and sofrito until well blended.
- Spoon evenly into pepper halves; place on foil-lined baking sheet.
- Bake 20 min.
- ; sprinkle with cheese.
- Continue baking 5 min.
- or until cheese is melted.
- Serve with salsa.
