Chicken Philly Sandwich
- 1 lb diced boneless skinless chicken breast
- 1 each sliced green and red peppers
- 1 large sliced onion
- 1 packages shredded mozzarella or sliced provolone cheese
- 1 packages sliced long ways, ciabatta rolls
- 1 pinch season salt
- 1 pinch black pepper
- In a skillet, saute vegetables in some butter until al dente & set aside.
- Next, do the same with chicken and seasonings with olive oil instead of butter until done.
- Spread butter on tops & bottoms of ciabatta rolls.
- Then, place tops of ciabatta face down & bottoms upright.
- Place chicken, vegetable mix, & then cheese on top of bottom pieces of bread.
- Bake until cheese melts & bread slightly crispy.
- Serve with chips or by itself.
