Bulgur Wheat Salad With Smoked Turkey Recipe
- 2 c. low-fat low-sodium chicken broth boiling
- 1 c. dry bulgur wheat
- 2 x green onions chopped
- 2 med carrots peeled, sliced
- 1/2 c. diced cucumber
- 2 Tbsp. chopped parsley
- 1 1/2 lb smoked turkey breasts cubed (or possibly use cubed cooked fresh turkey)
- 1/2 c. rice vinegar
- 1 Tbsp. lite soy sauce
- 1 tsp sugar
- 1 Tbsp. dry sherry
- 2 x garlic cloves chopped
- 1 tsp sesame oil
- Pour boiling broth over the bulgur wheat into a heatproof bowl and let stand for 1 hour.
- Drain any excess liquid.
- Combine the bulgur wheat with the green onions, carrots, cucumber, parsley, and cubed turkey.
- In a blender or possibly food processor, process the remaining ingredients, pour over the salad, and serve.
- This recipe yields 6 servings.
