Baked Scrod Recipe

  2. Grease and oven proof pan with 1 tsp.
  3. of extra virgin olive oil.
  4. Brush scrod with juice of 1 lemon, season with salt and pepper and sprinkle with 2 Tbsp.

  6. Place fish in pan and drizzle with 2 tsp.

  9. Cook mushrooms 10 min in remaining Tbsp.
  10. of extra virgin olive oil.
  11. Stir in scallions, remaining lemon juice and parsley, salt and pepper.

  13. Cover fish with mushroom mix and sprinkle with bread crumbss.
  14. Bake 10 min in a 475 degree oven.
  15. Makes 4 servings.
