Apple Cake
- 3 medium apples
- 1 tbsp cinnamon powder
- 3 medium eggs
- 2 cup flour
- 1 1/2 cup sugar
- 1 tbsp baking powder
- 3/4 cup vegetable oil
- 1 pinch salt
- Peel and dice the apples.
- Save the peels.
- Add 1 tablespoon of sugar and 1 tablespoon of cinnamon to the diced apples and mix well.
- Mix the flour, the sugar and the baking powder in a mixing bowl.
- Add the apples peels, the oil and the egg yolks to a mixer and mix until it becomes a homogeneous paste.
- Add the mixer contents to the dry ingredients.
- Beat the egg whites with a small pinch of salt until stiff and add it to the dough, mixing gently.
- Add the diced apples to the mix.
- Add the dough to a greased and floured baking pan.
- Sprinkle with sugar and cinnamon mix.
- Bake it at 180C for around 40 minutes in the oven.
