Microwave Lemon Bars Recipe

  1. Cream butter and powdered sugar.
  2. Add in 1 c. flour.
  3. Pat dough 1/8 inch thick into 12 x 8 inch glass baking dish.
  4. Microwave on high 3 to 4 min.
  5. Rotate dish 1/2 turn after 2 min.
  6. Cold.
  7. Mix beaten Large eggs, salt, sugar, lemon juice, lemon rind, 2 Tbsp.
  8. flour and baking pwdr.
  9. Pour mix over crust.
  10. Microwave on high 6 to 8 min.
  11. Rotate dish 1/4 turn at two minute intervals.
  12. Garnish with powdered sugar.
  13. Cut into bars.
  14. Serve hot.
  15. Makes 16 bars.
