Microwave Lemon Bars Recipe
- 1/2 c. butter
- 1/4 c. powdered sugar
- 1 c. plus 2 tbsp. flour
- 3 Large eggs, beaten
- 1/4 teaspoon salt
- 1 c. sugar
- 1/4 c. lemon juice
- 1 tbsp. grated lemon rind
- 1/2 teaspoon baking pwdr
- Powdered sugar
- Cream butter and powdered sugar.
- Add in 1 c. flour.
- Pat dough 1/8 inch thick into 12 x 8 inch glass baking dish.
- Microwave on high 3 to 4 min.
- Rotate dish 1/2 turn after 2 min.
- Cold.
- Mix beaten Large eggs, salt, sugar, lemon juice, lemon rind, 2 Tbsp.
- flour and baking pwdr.
- Pour mix over crust.
- Microwave on high 6 to 8 min.
- Rotate dish 1/4 turn at two minute intervals.
- Garnish with powdered sugar.
- Cut into bars.
- Serve hot.
- Makes 16 bars.
