Vegetarian Tikka Masala (Indian)
- 1 packages frozen cauliflower
- 1 packages frozen peas
- 2 medium fresh zucchini
- 4 large boiled potatoes
- 2 jars tikka masala sause (I use Patacks brand)
- 2 can coconut milk
- 1 bunch fresh cilantro
- 3 tbsp curry powder
- 2 tsp cumin
- 2 tbsp sugar (optional)
- 1 Salt & Pepper to taste
- Put all ingredients (including cilantro) in a large skillet EXCEPT the vegetables.
- Let sauce simmer for 1/2 an hour.
- Add remaining vegetables and simmer until zucchini and cauliflower are soft.
- I serve over basmati rice with homemade naan and mango lassi drinks.
