Bread And Butter Pickles Recipe
- 10 lb Small crisp cucumbers
- 1 1/4 c. Salt
- 15 c. Cool water
- 1 1/2 lb Small onions
- 6 c. Vinegar
- 5 c. Sugar
- 3 tsp Celery seed, (up to 4)
- 8 tsp Mustard seed
- 3 x - 4 teaspoon ginger
- 1 x Sp tumeric
- 1/2 tsp Mace
- 1 dsh Red pepper
- Wash and scrub cucumbers.
- Cut into 1/4 inch slices.
- Put into kettle.
- Sprinkle with salt and add in water.
- Cove and let stand 24 hrs.
- Drain 10 - 15 min.
- Put into kettle.
- Add in onions, peeled and sliced thinly, then vinegar, sugar and spices.
- Heat to boiling.
- Simmer 2 - 3 min.
- Pack into warm sterilized jars.
- Seal.
