Herb Crusted Beef Roast

  1. Stir together garlic, oil, basil and pepper and brush even over meat.
  2. Place roast fat side up on rack in shallow baking pan. Insert thermometer in thickest part.
  3. Roast, uncovered, in a 325u0b0 oven for 1 hour.
  4. With fingers, crumble bread to make 1 cup crumbs.
  5. Combine with parsley, onions and butter.
  6. Remove roast; quickly pat crumb mixture over meat.
  7. Return to oven; roast until thermometer is 135u0b0 (rare) to 155u0b0 (medium).
  8. Let stand 10 to 20 minutes before carving.
