Lemon Poppyseed Pancakes

  1. Whisk together all ingredients (do try to be precise with the water; these pancakes very easily end up too watery or too dry).
  2. Drop evenly onto an 8" skillet at medium heat.
  3. Flip when bubbles appear, then cook to golden brown.
