Mom's Minestrone Recipe

  1. In heavy, large size pot bring oxtail to boil turning burner down to simmer with lid on pot and cook till about 2/3 done.
  2. (Approximately 1 to 1 1/2 hrs.)
  3. Add in all vegetables, kidney beans, stewed tomatoes and macaroni, adding refried beans last, spooning small amounts at a time into soup, stirring well each time.
  4. (Refried beans have a tendency to lump, adhere to the bottom of the pot and burning...thus ruining taste of soup.
  5. Stir well often till vegetables and macaroni are done.
  6. When serving, sprinkle with Parmesan cheese.
