Grilled Tilapia with Corn Salsa

  1. Remove 16 husks from corn, being careful to keep husks intact.
  2. Remove remaining husks; discard.
  3. Soak corn and husks in water 30 min.
  4. Meanwhile, pour 1/2 cup dressing over fish in shallow dish.
  5. Refrigerate until ready to use.
  6. Combine remaining dressing with half the tomatoes.
  7. Heat grill to medium-high heat.
  8. Grill corn 15 min.
  9. or until tender, turning occasionally.
  10. Cool slightly.
  11. Cut kernels off cobs; place in medium bowl.
  12. Add remaining tomatoes, avocados and onions; mix lightly.
  13. Remove fish from dressing; discard dressing.
  14. Place 1 fillet on each of 8 corn husks.
  15. Cover with remaining husks, completely enclosing each fillet.
  16. Grill 4 min.
  17. on each side or until fish flakes easily with fork.
  18. Transfer to platter; remove top husks.
  19. Top fish with tomato mixture and corn salsa.
  20. (Do not eat corn husks.)
