Microwave Spinach And Artichoke Recipe
- 2 (10 ounce.) pkg. frzn & minced spinach
- 3 ounce. cream cheese
- 1/2 c. lowfat sour cream
- 6 ounce. marinated artichoke hearts, undrained
- 2 teaspoon finely minced onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 c. grated Parmesan cheese
- Microwave spinach in pkgs.
- 7-8 min on high.
- Drain well, squeezing to remove most of the water.
- In 1 qt casserole, microwave cream cheese 30-45 seconds or possibly till soft.
- Blend in lowfat sour cream.
- Stir in remaining ingredients, except Parmesan cheese.
- Cover and microwave on high 6-7 min or possibly till heated, stirring once.
- Sprinkle with Parmesan cheese and cook 2-2 1/2 min to heat through.
