Potatoes with Garlic Parsley Mayonnaise

  1. Boil potatoes in water until fork tender, about 15 minutes.
  2. Drain and let cool (do not refrigerate).
  3. Combine all remaining ingredients and gently fold into potatoes.
  4. Serve at room temperature.
