Bean And Egg Au Gratin Recipe

  1. Cook the beans in boiling salted water till just tender; drain.
  2. Place half the beans in a greased ovenproof dish and place the Large eggs on top.
  3. Cover with the remaining beans.
  4. Heat 3 Tbsp.
  5. of the butter in a pan, stir in the flour and cook gently, stiring, to make a roux.
  6. Remove from the heat and gradually add in the lowfat milk, stirring.
  7. Return to the heat and bring to a boil.
  8. Cook, stirring, till thickened.
  9. Season to taste with salt and pepper.
  10. Pour the sauce over the beans and sprinkle on the breadcrumbs and cheese.
  11. Dot with the remaining butter, place in a preheated warm oven (435F) and cook for 15 min till golden.
