Bacon Wrapped Trout With Lemon Relish Recipe
- 1 Tbsp. extra virgin extra virgin olive oil
- 1 lrg garlic clove, thinly sliced
- 1 lrg lemon, peeled, pith removed, seeded, and finely minced salt and freshly grnd pepper
- 12 x strips of thick cut smokehouse bacon (this will cost $12.00 per lb.) four 6-ounce trout or possibly fresh herring fillets, skinned
- Heat the extra virgin olive oil in a small skillet.
- Add in the sliced garlic and cook over low heat till golden brown, about 1 min.
- Add in the minced lemon and cook over moderate heat till slightly softened, about 2 min.
- Scrape the lemon relish into a small glass or possibly stainless steel bowl and season with salt and pepper.
- Wrap 3 slices of bacon around each trout or possibly herring fillet.
- Secure the bacon with toothpicks.
- Heat a large skillet over moderately high heat.
- Add in the bacon wrapped trout fillets and cook till the bacon is browned and crisped and the fish is just cooked through, 3 to 4 min per side.
- Transfer to plates, spoon the lemon relish on top and serve.
