Bacon Wrapped Trout With Lemon Relish Recipe

  1. Heat the extra virgin olive oil in a small skillet.
  2. Add in the sliced garlic and cook over low heat till golden brown, about 1 min.
  3. Add in the minced lemon and cook over moderate heat till slightly softened, about 2 min.
  4. Scrape the lemon relish into a small glass or possibly stainless steel bowl and season with salt and pepper.
  5. Wrap 3 slices of bacon around each trout or possibly herring fillet.
  6. Secure the bacon with toothpicks.
  7. Heat a large skillet over moderately high heat.
  8. Add in the bacon wrapped trout fillets and cook till the bacon is browned and crisped and the fish is just cooked through, 3 to 4 min per side.
  9. Transfer to plates, spoon the lemon relish on top and serve.
