Amy's Devilled New Potatoes
- 20 cocktail sticks
- 500 grams baby new potatoes
- 1 olive oil for brushing
- 10 rashers streaky bacon slices
- 20 small sage leaves
- soak toothpicks /cocktail sticks in warm water for about 20 minutes before use to avoid them burning .
- Bring a pot of water to boil and add the potatoes and boil for 10 minutes and drain .
- Now brush the potatoes all over with the olive oil .
- But each rasher of bacon slice in half widthways , now holding each piece at one end , smooth and stretch it with a knife .
- Then wrap a piece of bacon around a potato , enclosing a sage leaf inside and securing it to the potato with a toothpick / cocktail stick .
- cook in preheated frypan with a littt oil for about 6-8 minutes until cooked through , turning occasionally .
- serve hot or cold .
