Armenian Cucumber and Tomato Salad

  1. Toss sliced cucumber, tomatoes and scallions in bowl
  2. Season with kosher salt and coarse ground black pepper to taste
  3. No need to drain as with regular cucumber.
  4. Armenian cucumber does not have high water content or many seeds
  5. Pour olive oil and balsamic over salad.
  6. Toss to coat.
  7. Sprinkle with basil flakes
  8. Let marinate at least two hrs before serving.
  9. The longer the better.
  10. Keeps well for several days
