Curried Turkey Tacos
- 1 Tablespoon Chili Powder
- 1 teaspoon Paprika
- 2 teaspoons Cumin
- 1/2 teaspoons Oregano
- 1/2 teaspoons Salt
- 1 teaspoon Pepper
- 2 Tablespoons Curry Powder
- 1 Tablespoon Olive Oil
- 1 Onion, Diced
- 1 can (15 Oz. Size) Diced Tomatoes
- 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
- 2 cups Shredded Turkey (or Chicken)
- 10 Soft Tacos
- 1 Avocado, Sliced
- Feta Cheese, Fresh Chopped Cilantro, And Fresh Lime Juice, To Serve
- Combine spices in a small bowl.
- Heat olive oil in a large skillet over medium heat.
- Add onion, stirring until onions begin to soften and turn translucent.
- Add spice mix, stir, and cook until onions are very soft.
- Add diced tomatoes, black beans, and turkey.
- Check the seasoning, possibly adding more curry powder, salt, or pepper.
- Cook for about 10 minutes, until juices have reduced and the taco filling is thick.
- Heat the soft tacos in the microwave or in a pan on the stove.
- Spoon a hearty amount of filling into each, top with sliced avocado, feta, and cilantro.
- Squeeze a little bit of lime juice of each taco.
- Enjoy!
