Blueberry Crumb Coffee Cake

  1. Heat oven to 375 degrees.
  2. Grease and flour a square pan (9x9).
  3. Mix sugar, shortening and egg throroughly.
  4. Stir in soymilk/milk and OJ.
  5. Sift in flour and baking powder, and salt.
  6. Mix well.
  7. Fold in blueberries.
  8. In a seperate small bowl.
  9. Mix together ingredients for crumb topping.
  10. Pour batter into greased pan.
  11. Top with crumb topping.
  12. Bake 45-60 minutes.
  13. Enjoy!
