Spaghetti Sauce With Italian Sausage Recipe

  1. Prick Italian sausage casing and place in a cool skillet.
  2. Pour warm water over them; cover and cook for 10 min.
  3. Remove sausages with slotted spoon and cut into 1 1/2 inch chunks.
  4. Pour sausage drippings into a large Dutch oven and saute mushrooms, carrots, onion, celery, and parsley until just tender, but still crisp.
  5. Drain off any excess fat and return sausage to pot.
  6. Add in tomatoes, tomato paste, wine, bay leaf, salt, basil, and pepper.
  7. Cover and simmer 1 1/2 hrs or until thickened, stirring occasionally.
  8. Taste to correct seasonings.
