Spicy Broccoli, Prawn Orzo Salad
- 2 12 cups broccoli florets, steamed
- 8 ounces orzo pasta, cooked
- 2 large tomatoes, seeded and chopped
- 3 tablespoons parsley, chopped
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 8 ounces prawns, cooked
- Cut the broccoli into florets and steam in the microwave for about 1-1/2 - 2 minutes.
- Cook the orzo pasta according to directions.
- Drain.
- In a large bowl, combine all the ingredients and toss.
- Chill for 2 - 24 hours.
- Just before serving, adjust the seasonings if dry.
- Add a bit more olive oil and red wine vinegar.
