Almond Butter Raisin Cookies (Gluten-Free, Dairy-Free)

  1. Preheat oven to 375 F. In a large bowl, beat egg, almond butter, sugar, salt, baking soda and vanilla extract.
  2. Sift coconut flour into the egg mixture while continually stirring, until fully combined.
  3. Fold raisins into the mixture.
  4. Drop mixture by the spoonful onto a parchment paper-lined or lightly greased baking sheet allowing at least 3 inches between cookies.
  5. Bake for 10-14 minutes or until golden brown.
  6. Remove from oven and let cool.
