Blueberry-Ricotta Coffee Cake

  1. Heat oven to 350 degrees F.
  2. Combine baking mix, sugar and dry gelatin mix.
  3. Whisk ricotta, eggs and lemon zest in large bowl until blended.
  4. Add dry ingredients; stir just until moistened.
  5. Stir in blueberries.
  6. Spoon into 9-inch pie plate sprayed with cooking spray.
  7. Bake 35 min.
  8. or until toothpick inserted in center comes out clean.
