B.A.T. Tostadas
- 4 ripe, firm Hass avocados
- 3 tbsp. fresh lime juice
- 8 strip thick-cut bacon
- 2 c. mixed cherry tomatoes
- 8 crisp flat tostada shells
- 1/2 c. shredded Mexican cheese
- salt
- In a small bowl, mash 2 of the avocados with 1 tablespoon of lime juice and 1/2 teaspoon of salt.
- Cut the remaining 2 avocados into 1/2-inch dice and sprinkle with 1 tablespoon lime juice.
- Cook bacon in a large skillet over medium heat until crisp, about 10 minutes.
- Break into 2 inch pieces.
- Meanwhile, in a medium bowl, gently toss together diced avocado, tomatoes, and the remaining 1 tablespoon of lime juice.
- Sprinkle with 1/2 teaspoon of salt.
- Spread mashed avocado on tostada shells, dividing evenly.
- Spoon tomato mixture on top.
- Sprinkle with bacon and cheese.
